Galloway Focus

This years Galloway Country Fair has a special focus on Galloway Food and Drink and in particularly Galloway Beef.

New Products!

Kerr Little from the Little Bakery and winner of this year’s World Scotch Pie Championships has created an exclusive Galloway Scotch Pie for the event. Sample the delicious pie in the new ‘Pie Bar.’

Demonstrations

In addition to demonstrations by Auldgirth Inn, Crafty Distillery, Ninefold Rum and Amy Rankine (Forager (SAT ONLY)), we are also welcoming Fraser Cameron, one of Scotland’s leading young chefs and Chef Ambassador for Galloway Beef to the fair.

Fraser will be doing 4 demonstrations in the Galloway Demo Kitchen over the weekend.:
• Smoked Galloway beef fillet tartare, classic garnish, quail egg, black garlic emulsion.
• Pulled Galloway brisket, Smoked paprika mayonnaise, toasted sourdough, braised red cabbage
• Galloway Bistro fillet stuffed with St James whisky smoked salmon, meaux mustard mayonnaise, Annandale distillery Cask 1 sauce, glazed silverskin onion
• Dukkah spiced Galloway rib eye, soy emulsion, yuzu gel, charred onion

Info about Fraser:
Fraser recently won bronze in the Scottish Young Chef of the Year championships, was a Scottish Food & Drink Fortnight Young Ambassador last year and was one of three young people to go on a Galloway Beef learning journey to Australia last year. He is passionate about the quality and flavour of Galloway beef and will work with the Galloway Cattle Society to promote Real Galloway Beef through recipe ideas and serving suggestions.
Fraser has recently joined Annandale Distillery to develop the restaurant at The Globe when it reopens after its extensive refurbishment.

Galloway Cattle Society

Galloway Cattle Society will also be in attendance at the fair with some cattle.

Info about Galloway Beef:
Galloway Beef LogoThe Galloway is one of the oldest and purest of Scotland’s native cattle breeds and beef from Galloways has distinct properties, including intra-muscular fat marbling through the meat and a balance of omega oils that is similar to salmon. Galloway Beef is widely considered to be a premium meat, yet at present it rarely commands a premium price at the farm gate. The Galloway Cattle Society recently launched it’s Real Galloway Beef quality assurance scheme to address this. The standards note that cattle sold under the ‘Real Galloway Beef’ brand must have at least one parent registered with the Galloway Cattle Society, should be primarily grass fed and reared outside. The Society are now working with a range of supply chain partners to make Galloway Beef more accessible. www.gallowaybeef.co.uk

We have been able to achieve this Galloway focus with funded support. The iniative has been supported by the Connect Local Regional Food Fund, which is financed by The Scottish Government, in partnership with industry, and has been created to promote local food and drink, in line with Ambition 2030.
